I sent an earlier email to your contact email but didn’t hear back. There was over 2# of fat on this ham which I thought was a little excessive. We’ve ordered probably a half a dozen or more of these from you and this year’s was unusual in this respect. Also, the ham seemed less “cured” and/or dried than prior ones. Seemed like it was a bit too moist or something and the flavor didn't seem as intense as others. I do know that they’re not being processed anymore in VA since the smokehouse burned. Some things to consider.

This is a very good ham. It is very close to the Italian prosciutto that we are always on the lookout for. My husband is half Italian and we travel there often. We love prosciutto and now we can have a very similar taste right here at home. Thank you.
