Ci sono luoghi dove il tempo non passa: fermenta. LâAntica Acetaia Giuseppe Giusti Ú uno di questi.
Visitare la cantina storica significa entrare in una specie di cattedrale silenziosa: batterie di botticelle di legni diversi â rovere, castagno, ciliegio, ginepro â dove ogni travaso racconta anni, non stagioni. Lâaria profuma di mosto cotto, legno e attesa. Lâattesa Ú lâingrediente principale del balsamico, e non si può accelerare: ci sono balsamici di oltre cent'anni che vengono venduti qui, e il sapore che hanno Ú il sapore del Tempo.
La degustazione guidata - gratuita - Ú stata uno di quei momenti in cui capisci davvero cosa significhi la parola âstratificazioneâ: dolcezza, acidità , densità , memorie di frutta, legno, caramello. Non un condimento, ma un racconto liquido.
